Sweet Potato, Avocado, and Bacon Appetizer


1 sweet potato cut into ½ inch rounds

1 large avocado

1 tablespoon minced red onion

1 tablespoon chopped cilantro

Juice of ½ lime

Salt & pepper to taste

½ cup chopped cooked bacon

Preheat oven to 350°.  Place sweet potato rounds on cooling rack on a cookie sheet.  Rub both sides with olive oil then season with salt and pepper.  Bake for 20-25 minutes until the rounds are tender but not mushy.  Remove from the oven and cool slightly.

While sweet potatoes, are baking, slice strips of bacon into ½ in slices.  Sauté until crispy.  Drain on a paper towel.

Mash avocado leaving some large pieces.  Add minced red onion, cilantro, lime juice, salt and pepper.  Mix well.

To assemble:  On a serving plate, place the sweet potato rounds down first.  Add mashed avocado mixture and top with bacon.
