Pasta Papa ala Mama


1-pound Pasta

1-pound bacon

1-pound sausage

5 eggs

1 1/2 cups grated Parmesan or Asiago cheese

1 onion

2 cloves garlic

1/4 cup chopped parsley

Salt and pepper to taste


Cook pasta according to directions on the package.

Dice bacon and sauté until crisp.  Drain and hold in 250-degree oven.  Sauté sausage until brown.  Place in same pan as bacon in the oven.

Cook diced onion and garlic until lightly browned.  Add to pan with the bacon and sausage.

Scramble eggs.

In a large bowl assemble all the ingredients.  Bacon, sausage, onion, garlic, Pasta, eggs, cheese, parsley, salt and pepper.  Toss together.  If it seems too dry, you can add some Pasta water or some olive oil.

**I usually cook the bacon and sausage ahead of time and keep them in a Ziploc bag in the refrigerator or freezer.  The pasta can also be prepared ahead of time and reheated.
