Cardamom Rolls

2 ½ -3 cups all-purpose flour

1 package active dry yeast

1 teaspoon ground cardamom

¾ cup milk

1/3 cup sugar

¼ cup butter

½ teaspoon salt

1 egg

 

In a large mixer bowl, combine ¾ cup of flour, yeast and cardamom.  Heat milk, sugar, butter and salt until butter is melted and warm (115-120 degrees).  Add to flour mixture, add egg and beat at low speed of electric mixer 30 seconds.  Then on high speed for 3 minutes. Switch to a dough hook if you have one.  Add 1 ¾ -2 ¼ cups more flour.  Continue to mix until the dough begins to take shape.  Turn out onto a lightly floured surface and knead in remaining flour until you have a moderately soft dough that is smooth and elastic. (3-5 minutes total).  Shape into a ball and place into a greased bowl.  Cover and let rise until double (about 1 ½ hours).

Punch down dough and divide into 12 equal parts.  From here you can just shape them into rounds if you’d like or divide each ball of dough into thirds and form a small braid.  Let rise again for 45 minutes or until puffy.

Brush each roll with warm milk and sprinkle with sugar.  Bake at 375 for 15 minutes or until golden brown.
